SWEET MANGO - Recipes

The music of Prince H. Hot & Spicy Mango Vegetables (Serves 2)

2 TB. vegetable oil
1 carrot, sliced or julienned
2 stalks of celery, sliced or julienned
Half of a red bell pepper, sliced or julienned
Half of a red onion, sliced
1 or 2 jalapeno peppers, chopped
1 cup snow peas
2 cloves of garlic, finely chopped
2 TB. fresh ginger, finely chopped

In a hot skillet, add the oil, carrots, celery, red bell peppers, onions and jalapeno peppers.  Sauté for two minutes, then add snow peas, garlic and ginger, and sauté for one more minute.  Pour the vegetables on a plate and set aside.

In the hot skillet, add ½ cup white wine, and the juice of 1 lemon and 1 lime.  Reduce the liquid to half.  Add 2 ripe mangos, peeled, pitted and chopped.  Add the sautéed vegetables and stir-fry the mixture.

Options: Chicken, beef, fish or tofu may be added for protein.  Stir-fry these first, then add the vegetables.

Serve with rice.
