SWEET MANGO - Recipes

The music of Prince H. Lawsha's second CD Sweet Mango is an exotic blend of innovative compositions and seductive rhythms that's both irresistibly danceable and soothing to the soul.  Listeners are calling it luscious, delicious, festive and happy music!  The colors and flavors of this world music inspired Prince to design original mango recipes with a tropical 'rhythm party' feeling.  Just as his drumming sways with a tantalizing groove on this CD, Prince's talent in the kitchen is praised for his tasty blend of herbs and spices from around the world.

Fresh Mango Sauce - Medium Hot

1 firm ripe mango, peeled and pitted
2 Tb. fresh mint leaves, chopped (or 1 Tb. dried mint leaves)
2-3 garlic cloves, roughly chopped
2 Tb. chili oil (or 1 jalapeno chili, seeded and roughly chopped)
Half a lemon, juiced
½ t. lemon zest (grated skin of lemon)
salt and pepper to taste

Mix in blender, in order: mango, chili oil, garlic, lemon and zest, mint leaves
Remove sauce from blender and add salt & Pepper to taste.  Yield: 2 cups

For a hotter sauce - add more chili oil and garlic.

Serve on a warm plate under or over vegetables, fish or chicken.
